Nigerian vegetable rice is a rice recipe with lots of leafy greens. It can be served with chicken, beef, and more.

Procedure[edit | edit source]

  1. Rinse the rice, and drain well.
  2. Boil the rice until half-cooked, then drain. Rinse well and set aside.
  3. Combine dryfish, salt, fresh pepper, and onion in a pot. Add a little water, and cook until the fish is soft.
  4. Heat a thin layer of vegetable oil in a clean pot. Add the chopped onion, and cook for a few minutes.
  5. Add the cooked rice, stockfish, stock cube, cameroon pepper, and salt.
  6. Mix in the green leaf, uziza leaf, and scent leaf, then top with the dryfish. Cover and cook until the rice is cooked through.
  7. Remove from heat and serve.
