Potato and fish porridge is a savory Nigerian porridge containing vegetables and fish.

Procedure[edit | edit source]

  1. Place the potato pieces, sliced onion, and pepper in a pot. Cover with water, then top with the fish.
  2. Bring to a boil, and simmer until one side of the fish is cooked. Flip the fish over, and allow the other side to cook.
  3. Remove the cooked fish from the pot, and set aside.
  4. Stir the palm oil, salt, and seasoning cube into the pot. Cover, and simmer until the potato is tender and the mixture has thickened into a porridge.
  5. Stir in the cooked fish and spinach, and serve.
