Nigerian potato cutlet is a sort of crispy mashed potato patty, well-seasoned and flavored with cooked onions.

Procedure[edit | edit source]

  1. Wash and peel the potatoes.
  2. Boil the potatoes in salted water until tender. Remove from the heat and drain the potatoes.
  3. Heat a thin layer of oil in a nonstick pan, and add the chopped onion, garlic, and ginger. Cook for a few minutes until the onion is softened, then remove from the heat.
  4. Mash the potatoes, then stir in the cayenne, cinnamon, and cooked onion mixture. Season with salt.
  5. Shape the potato mixture into patties. Pan-fry the patties until golden and crispy on both sides.
  6. Serve hot.
