Nigerian plantain stew is a dish using ripe plantain and other stew ingredients.

Procedure[edit | edit source]

  1. Heat a small amount of olive oil in a pot. Add the onion and red pepper, and cook for about 5 minutes until soft.
  2. Add the garlic and paprika, and continue cooking for about a minute.
  3. Stir in the tomato, vegetable broth, tomato paste, kidney beans, and coconut milk. Cook for 25 minutes.
  4. Heat some olive oil in another pot. Add the sliced plantain, and cook for about 5 minutes until the plantain is soft. Remove the plantain and transfer to a plate.
  5. After the stew has simmered for 25 minutes, remove from heat. Add lime juice, olive oil, salt, and pepper.
  6. Serve.
