Nigerian pineapple rice is a Nigerian rice dish featuring pineapples and other vegetables.

- Soy sauce
- Sesame oil
- White pepper, ground
- Ginger, minced
- Olive oil
- Onion, chopped
- Garlic, minced
- Carrot, chopped
- Frozen corn kernels, thawed
- Peas
- Cooked brown rice
- Sliced pineapple
- Ham, diced
- Green onion, chopped

- Spoon
Procedure[edit | edit source]
- Combine the soy sauce, sesame oil, white pepper, and ginger. Set aside.
- Heat some olive oil in a pot. Add the garlic and onion to the pot, and cook until the onion changes color.
- Add the carrots, corn, and peas. Cook, stirring continually for a few minutes.
- Add rice, pineapple, ham, green onions, and the soy sauce mixture. Cook, stirring continuously, for 2 minutes.
- Serve.
