Ji akwukwo is a Nigerian dish made with yam, vegetables, and palm oil. You can use different vegetables according to your preferences.

Procedure[edit | edit source]

  1. Transfer the diced yam to a pot, and cover with water. Bring to a boil, then simmer until the yam is soft.
  2. Drain the water from the yams, and return the yam to the pot.
  3. Add the onion, pepper, and ukpaka to the yam, and stir over medium-high heat.
  4. Season the yam with salt and palm oil.
  5. Stir in the shredded amaranth, then cover the pot and allow the mixture to steam.
