Fenugreek, or Trigonella foenum-graecum, is native to India and southern Europe. People cook with the hard, yellow-brown seeds that come from the plant's pods. Fenugreek contains only minute quantities of an essential oil. Indian cooking often employs fresh fenugreek leaves, which are eaten sautéed, or dried and used as a flavoring.
