Coddle is a popular meal in Dublin. It's seen as an economical dish and can be stored in fridge and reheated in microwave. It goes well with soda bread or brown bread.
Ingredients[edit | edit source]
- 550 g sausages
- 250 g bacon, chopped into 3 cm pieces
- 300 ml chicken stock or water
- 6 medium-sized potatoes
- 2 medium onions
- Salt
- Pepper
Procedure[edit | edit source]
- Completely submerge bacon, onions, and sausages in broth, then boil for about 5 minutes.
- Add the potatoes, cutting into bite-sized pieces if necessary, then add the rest of the stock.
- Return to the boil and simmer for about 1 hour, or until the potatoes have started to disintegrate, thickening the broth.
- Add salt and pepper to serve.
