Cirdingis (pronounced as "jirdingish") is a traditional Chechen meal consisting of dumplings and meat served with accompanying sauces. It may also be called "galnish".

Ingredients

• 1 kg red meat
• ½ kg flour
• 3 cloves garlic
• Salt
• Tomato paste
• Oil

Visual procedure

• 
  1. Make a "crater" in the middle of flour
• 
  2. Pour water into the well
• 
  3. Mix with hands to form a dough
• 
  4. Knead dough well until smooth
• 
  5. Add more flour if dough is too sticky
• 
  6. The finished dough should be smooth and not too sticky
• 
  7. Sprinkle work surface with flour
• 
  8. Cut dough into several pieces
• 
  9. Sprinkle a dish with flour
• 
  10. Place the dough pieces on the floured dish
• 
  11. Take a piece of dough and roll into a long rope
• 
  12. Flatten the dough rope slightly
• 
  13. Cut the rope into pieces
•

  15. Toss the cut pieces with flour
• 
  17. Roll the pieces to about 2 inches long with your hands
• 
  18. Place the dough piece on floured surface
•

  22. Place the finished cirdingis on a platter
• 
  23. Boil a pot of water and add the cirdingis to cook
• 
  24. Strain out the cooked cirdingis
• 
  25. Serve cirdingis with sauces
