A breading is a coating for a piece of meat, poultry, fish, seitan, tofu, or textured soy, etc., made from breadcrumbs or a breading mixture. Breading is ideal for frying because it creates a crispy coating around the food. Breading mixtures can be made from wheat flour, salt, and yeast.

Breaded fish cutlets

In some countries, breaded foods are referred to as "crumbed". Breading can also refer to croutons.
