Boiled plantain and garden egg sauce is a and tasty recipe of the Igbo people in Nigeria.

- Large plantain, peeled
- Garlic
- Fresh ginger
- Garden egg
- Cayenne pepper
- Palm oil
- Salt
- Seasoning cubes

Procedure[edit | edit source]
- Boil the plantain in water for 30 minutes until tender. Drain plantain.
- Blend the garlic, ginger, garden egg, and cayenne pepper until you get your desired consistency of purée.
- Heat some palm oil in a non-stick frying pan. Add the purée, then stir in salt and seasoning cubes. Cook for 5 minutes.
- Serve sauce with boiled plantain.
