Boiled plantain and garden egg sauce is a and tasty recipe of the Igbo people in Nigeria.

  1. Boil the plantain in water for 30 minutes until tender. Drain plantain.
  2. Blend the garlic, ginger, garden egg, and cayenne pepper until you get your desired consistency of purée.
  3. Heat some palm oil in a non-stick frying pan. Add the purée, then stir in salt and seasoning cubes. Cook for 5 minutes.
  4. Serve sauce with boiled plantain.
