Aji amarillo peppers are a variety of chili pepper commonly used in Peruvian cooking. They have a distinct, somewhat fruity taste and are considered moderately hot, registering around 40-50,000 units on the Scoville scale. Although aji amarillo is Spanish for "yellow pepper," they may vary in color from yellow to orange as the seed pod matures. They may be purchased fresh, frozen, or as a puree.
