How to make a widows soup (soppa ta L' armla)
For four servings
- 100g onions
- 100g potatoes
- 100g courgettes
- 150g peeled tomatoes
- 200g ricotta
- 125g peas
- 125g cauliflower
- 50g tomato paste
- 4 eggs
- 4 cheeslets
- Slice vegetables, fry onions.
- In a pot add all ingredients, except eggs and ricotta, and cheeslets
- Add salt and pepper and bring to boil.
- Let the mix simmer until the vegetables are cooked then add the eggs, the ricotta is cut in large chunks, add cheeslets at the last few minutes of cooking.
