Nigerian peanut brittle, sometimes known as peanut candy, is a crunchy sugar sweet studded with crushed peanuts. It is a favorite food in the north of the country, particularly among Hausas.
Ingredients[edit | edit source]
Equipment[edit | edit source]
Procedure[edit | edit source]
- Place the peanuts on a flat surface, and use a rolling pin to crush them into medium-sized chunks.
- Combine the water and sugar in a saucepan over medium heat, and stir until the sugar dissolves. Increase the heat and cook the syrup until it has caramelized.
- Stir the nuts into the hot caramel, and immediately spread the mixture onto a greased, heat-safe surface. Use a greased knife to cut the mixture into bars while still warm or cool completely and break into pieces.
- Keep any leftovers in an airtight container.
