Nigerian macaroni jollof is a special type of macaroni dish often eaten by children.
Ingredients[edit | edit source]
- Macaroni pasta
- Ground crayfish
- Red peppers
- Vegetable oil
- Onion, chopped
- Tomatoes, chopped
- Thyme
- Salt
- Nigerian curry powder
- Spring onion, chopped
Procedure[edit | edit source]
- Bring a pot of water to a boil. Add the macaroni, and cook until the pasta is tender. Drain the macaroni and reserve.
- Grind together the crayfish and peppers.
- Heat a thin layer of vegetable oil in a pan. Add the chopped onion, and cook until softened. Stir in the tomatoes, and cook for a few minutes.
- Season the tomato mixture with thyme, salt, and curry powder. Simmer for a short while.
- Stir in the macaroni and spring onions.
- Serve hot.
