Coconut puff puff is a sweet fritter enjoyed in the streets of Nigeria mostly by lads.
Ingredients[edit | edit source]
- Coconut milk
- Warm water
- Sugar
- Salt
- Dry yeast
- All-purpose flour
- Coconut flakes
- Groundnut oil
Procedure[edit | edit source]
- In a large dry bowl combine the coconut milk, warm water, sugar, salt, and yeast. Set aside for 7 minutes.
- Add flour and mix with your hands. While mixing, add the coconut flakes and mix well.
- Set the mixture aside in a cool area, and allow it rise and double in size for at least 2 hours.
- Heat several inches of oil in a large pan over medium heat.
- The dough is expected to be sticky, so use your hands to grab and drop a little amount in the oil in the shape of a ball. Work in batches so as not to overcrowd the pan.
- Deep fry for a few minutes until one side is golden brown.
- Turn the fritters over and fry for a few more minutes until the other side is golden brown as well.
- Remove from the oil and repeat the frying process until all the dough is used up.
