Edo black soup is, as the name implies, a soup common among the Edo people of Nigeria. It can be eaten with any swallow of your choice such as starch, eba, fufu, wheat, or semovita.
Ingredients[edit | edit source]
- Bitter leaf
- 4 onions
- 4–6 habanero peppers
- Goat meat
- Snails (optional)
- Seasoning/stock cubes
- Dried fish, washed
- Ground crayfish
- Fermented locust beans
- Dried prawns
- Salt
Procedure[edit | edit source]
- Wash the bitter leaf very well (as if you are washing clothes) until all the bitterness is gone. Blend it to a paste.
- Blend the onions and peppers to a paste.
- Combine the goat meat, snails, onion-pepper paste, and seasoning cube in a pot. Add enough water to just cover the meat. Bring to a boil, and simmer until the meat is soft. After a while add your washed dry fish.
- Transfer the bitterleaf paste to a pot, and bring to a boil over medium heat. Add the cooked meat, fish, stock, ground crayfish, fermented locust beans, dried prawns, and salt to taste. Simmer for 5–7 minutes.
- Serve.
