Efo riro is a rich vegetable soup popular among the Yoruba people, made with leafy greens and assorted meats.

Ingredients

  • Fresh spinach or efo shoko
  • Palm oil
  • Pepper mix (tomatoes, tatashe, ata rodo)
  • Onions
  • Locust beans (iru)
  • Assorted meat
  • Stock fish
  • Crayfish
  • Salt and seasoning

Procedure

  1. Blend pepper mix and set aside.
  2. Heat palm oil, add iru and onions.
  3. Add blended pepper and fry well.
  4. Add meats and stock fish.
  5. Stir in vegetables and cook briefly.
  6. Serve with pounded yam or eba.
