Efo riro is a rich vegetable soup popular among the Yoruba people, made with leafy greens and assorted meats.
Ingredients
[edit | edit source]- Fresh spinach or efo shoko
- Palm oil
- Pepper mix (tomatoes, tatashe, ata rodo)
- Onions
- Locust beans (iru)
- Assorted meat
- Stock fish
- Crayfish
- Salt and seasoning
Procedure
[edit | edit source]- Blend pepper mix and set aside.
- Heat palm oil, add iru and onions.
- Add blended pepper and fry well.
- Add meats and stock fish.
- Stir in vegetables and cook briefly.
- Serve with pounded yam or eba.
