Nigerian plantain omelette is a variety of omelet made from ripe plantain and various vegetables.

  1. Fry the sliced plantain in oil until golden. Set aside.
  2. Heat a thin layer of vegetable oil in a pan, and add the onions, peas, tomato, and frankfurters. Fry for 2 minutes. Remove from the heat and cool slightly.
  3. Whisk the eggs with a pinch of salt. Stir the onion mixture into the beaten eggs. Stir in the scent leaves and spinach.
  4. Heat a thin layer of oil in a clean pan. Pour in the egg mixture, and let cook through. If the omelet is not cooked on top, flip it over to cook both sides.
  5. Remove the pan from the heat, and transfer the omelet to a plate.
  6. Serve hot.
