Nigerian plantain omelette is a variety of omelet made from ripe plantain and various vegetables.

- Ripe plantain, peeled and sliced
- Vegetable oil
- Onion, sliced
- Green peas
- Tomato, chopped
- Smoked beef frankfurters, chopped
- Eggs
- Salt
- Scent leaves, sliced
- Fresh spinach, sliced

- Frying pan
- Stove
- Bowls
- Knife
Procedure[edit | edit source]
- Fry the sliced plantain in oil until golden. Set aside.
- Heat a thin layer of vegetable oil in a pan, and add the onions, peas, tomato, and frankfurters. Fry for 2 minutes. Remove from the heat and cool slightly.
- Whisk the eggs with a pinch of salt. Stir the onion mixture into the beaten eggs. Stir in the scent leaves and spinach.
- Heat a thin layer of oil in a clean pan. Pour in the egg mixture, and let cook through. If the omelet is not cooked on top, flip it over to cook both sides.
- Remove the pan from the heat, and transfer the omelet to a plate.
- Serve hot.
