Gizdodo is a popular Nigerian dish consisting of gizzard and plantains (dodo). It is commonly served at parties alongside small chops. It can be eaten with various kinds of cooked rice.

  1. Combine the gizzard, onion, seasoning cube, curry, and thyme in a pot. Cook over medium heat.
  2. Blend the bell peppers, scotch bonnet pepper, tomatoes, onions, and ginger to a coarse paste.
  3. Heat vegetable oil in a saucepan. Add diced onion and garlic, and fry until softened. Stir in blended pepper mixture, and cook for about 10 minutes.
  4. Heat oil in a pan, and fry the plantain. Remove.
  5. Fry the gizzard in the oil until dry and brown. Remove excess oil.
  6. Add the cooked onion-pepper mixture to the gizzard, and fry for a while.
  7. Gently stir in the fried plantain. Simmer for a few minutes, and adjust the seasoning as needed.
  8. Remove from heat, and serve with rice.
