Miyan gyada is a special vegetable groundnut soup from northern Nigeria. It is very popular and easy to prepare. It can be prepared with any type of meat. This special soup can be combined with any type of tuwo or pounded yam.

Procedure[edit | edit source]

  1. Pick over the groundnuts to remove any stones or debris.
  2. Heat some oil in a frying pan, and add the groundnuts. Toast the groundnuts, stirring them every so often, until aromatic. Remove from the heat and set aside to cool.
  3. Grind the cooled groundnuts to a paste in a blender.
  4. Blend some onion, tomatoes, scotch bonnet pepper, and bell peppers to a paste. Set aside.
  5. Soak the chopped African spinach in hot water for a while.
  6. Add the beef and some onion to a pot. Season with salt and seasoning cube, and cover with water. Bring to a boil, and simmer until the meat is tender.
  7. Heat some palm oil in a saucepan. Add the locust beans, and allow to fry for a few seconds.
  8. Add the blended tomato-pepper paste. Allow to cook for some minutes.
  9. Add the groundnut paste, stirring to avoid sticking.
  10. Add some of the stock made from boiling the meat. Add the dryfish, and season the sauce with salt and seasoning cubes as necessary.
  11. Add the boiled meat, and leave the soup to cook.
  12. After the soup is well cooked, drain and stir in the soaked spinach. Reduce heat and allow to simmer for a few minutes.
  13. Serve with tuwo.
