This recipe uses premade extracts and fermentation to make a carbonated beverage. It is adapted from an online blog.[1]
Ingredients
[edit | edit source]- ⅛ tsp (0.625 ml) champagne yeast or 2 tsp (10 ml) kefir grains
- ½ tbsp (7.5 ml) soda extract
- 1 cup (240 ml) white sugar
- 2 L water
Procedure
[edit | edit source]- Sterilize all your equipment before beginning.
- Combine all of the ingredients in a container suitable for fermentation. Note that gas will be produced during the fermentation.
- Put the container in a warm place, and allow it to ferment for 3 days.
- If desired, strain the finished product. Store in the fridge.
Notes, tips, and variations
[edit | edit source]- When fermenting in sealed containers from which gas cannot escape, there is a risk of explosion, which can range from messy to dangerous. Use caution and select an appropriate container.
- If you allow the fermentation to proceed for too long (i.e. longer than a few days, depending on the conditions), it will develop a significant alcohol content and will decrease significantly in sweetness.
