Ingredients[edit | edit source]

Beans and Veggies[edit | edit source]

  • 1 can black beans, drained & rinsed
  • 1 can chickpeas, drained & rinsed
  • 1 can corn, drained
  • 1 can kidney beans, drained & rinsed
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • ½ red onion, chopped

Dressing[edit | edit source]

  • 3 T. chopped fresh parsley
  • ¼ cup balsamic vinegar
  • ½ cup olive oil (I use less & add some water instead)
  • 1 tsp. dijon mustard
  • 1 clove garlic, chopped
  • 1 T. honey
  • salt & pepper

Procedure[edit | edit source]

Mix dressing ingredients well. Place salad ingredients in a bowl & add dressing. For best flavor, allow to marinate overnight.

Yields: a lot!!
