When it comes to instructions, please proofread my work. As a southpaw I create my own designs and never work from published instructions. That's great from a licensing standpoint, and you can do a horizontal flip of my work for right-handed crocheters, but it's a real weakness in terms of writing out the terms. There are a couple of ways you can do this. I think I would get rid of the Introduction to Crochet/Simple projects page, but still list it in the Table of contents (just not as a link). The TOC could read something like this:
- Simple Projects
Here, each project gets a page of its own, and there is not "simple projects" page at all. You could keep the projects page, and just add links to each project, or you could go a little crazy and make the Simple Projects page transclude each project. All the projects would show up on that page. But then you'd need to adjust the number of equal signs in each project so that it nested correctly. Here's how to transclude:

{{:Introduction to Crochet/A set of coasters}}
==A potholder==
{{:Introduction to Crochet/A potholder}}
==A scarf==
{{:Introduction to Crochet/A scarf}}
The colon (:) in front of each page, plus the braces vs brackets cause the contents of the page to be included on the page that calls it out.
Or - you could make a template for each project (I could help you, but not until later tonight). I do this frequently in my books, as it decouples the information from the presentation. You can see an example at Field Guide/Birds - Eastern US and Canada. This page transcludes pages from a completely different book (which I initially put together), and each of these pages uses the Bird_id template to show each bird.
Hmm... maybe Adventist Youth Honors Answer Book/Household Arts/Cooking would be a better example. It uses a template called Template:Adventist Youth Honors Answer Book/Recipe.

[edit] Two more projects
I've started placeholder pages with images only for two more projects: a hair scrunchy and a beaded bracelet. Might reshoot the bracelet because the finished picture didn't turn out very well.
