Cookbook talk:Placenta stew

why does this recipe state 3/4 of a placenta when the weight of placentas very so widely? and because the placenta really can be treated as any other meat, is it necessary to include such a bland recipe when a potential chef could simply check some more creative and numerous beef stew recipes?
