I thought the mayonnaise was a mixture of egg white with oil. —The preceding unsigned comment was added by 190.166.29.142 (talkcontribs) 2008-01-24T09:09:42.

A classic mayonnaise is made with oil, egg yolk, and acid (e.g. vinegar, lemon juice). There are egg white versions, probably made from some irrational fear of nutrition or some such, but they don't stack up against a good yolk-based mayonnaise IMHO. Webaware talk
