This is an alternative way to make FRENCH FRIES:
Ingridients: Potato Salt Basin of water Oil
Procedurs: 1. Put the salt into the basin of water. 2. Peel potato and cut into strings. And put it into the basin of water with salt. 3. Let it soaked until 30 minutes or so. 4. In pan put oil and wait untill hot enough. Then fry potato until golden brown. 5. Remove from oil and put into paper towel to absob left over oil.

You know, if I want mashed potatoes I'll get a recipe for one. The secret to restaurant fries is oil blanching, not water blanching. I tried this recipe and it tasted more like fried mashed potatoes than fries. Paper towels make it greasy anyways because it absorbs it and holds it right at the surface of the food, thus making it greasy. That's why I always use a cooling rack to drain.
