Food grade Xanthan gum.

Xanthan gum is a natural product created during fermentation of sugar by Xanthomonas campestris bacteria. It is a polysaccharide and packaged as a dry, white powder.

Xanthan gum has a wide number of food and industrial uses. In cooking it is used as an emulsifier and to modify the viscoscity of mixtures.
