Florence fennel is variety of fennel that has been bred to grow a bulbous stem, which can be used as a vegetable. It has a crunchy texture and a flavour between celery and aniseed.

The bulb can be eaten raw, in a salad, boiled or roasted as a side vegetable, or included as an ingredient in dishes such as risotto.
