- 1 cup flour
- 4 cups breadcrumbs
- 1 tsp salt
- ½ lb beef suet, chopped
- 1 tsp allspice
- ½ lb raisins
- ¾ lb currants
- ¾ lbs sultanas (golden raisins)
- 3 oz candied orange peel
- 3 oz candied lemon peel
- 1 oz citron
- 2 oz almonds, roughly chopped
- 2 oz glacé cherries
- ¾ lb brown sugar
- juice and grated rind of 1 lemon
- 3 eggs
- 2½ tbs rum
- 1 tbs brandy
- 4 tbs ale or stout

1. Mix all ingredients well, adding the fruit pieces last so they don't get broken up.
2. Steam the pudding for a long long time. The traditional way is to wrap it in a cloth and boil, but its hard to find anyone that prefers the result of this approach.
3. Before serving it hot with custard, its traditional to set the pudding on fire. Yes, really. The alcohol soon burns off.
Be aware that this is a very dense filling pudding, not like modern cakes.
