APPLE POTATO BREAD FROM ULSTER

Ingredients 3 cups (400g) Potatoes (about 2 potatoes) Knob of butter (1/4 cup) 3/4 cup Plain Flour Pinch of Salt 3 peeled medium/small apples (or 2 peeled large apples) 2 tablespoons sugar Optional: 1.5 tsp cinnamon 1.5 tsp ground cloves


Method 1) Peel the potatoes and quarter them. Boil in water until the center is soft. Drain the water and then leave the potatoes in the hot pan to dry out. Once dry-ish, mash them smooth.

2)Cut the butter into the flour until it's crumbly. Add salt and then mix in mashed potatoes. Knead a few minutes.

3) Divide in half and roll into two rounds.

4) Slice the apples and place in a pot, add the sugar (and cinnamon and cloves) and heat through for 3 min, remove from heat.

5) Use the two disks of potato bread like a sandwich and place the apple mixture into the middle.

6) Pre heat a skillet pan with 2 tablespoons oil and place the potato bread sandwich in it and cook for 3 min each side and serve straight away.
