Coban salatasi is a simple Turkish salad using fresh ingredients common in the region. Many other neighboring countries have a variation on this salad. In example, there is a Greek version with anchovies and an Arabic version that is simplified.

The main ingredients in this salad are onions, cucumber, and tomato. The dressing has an acid, either lemon or vinegar, and olive oil it is usually heavily salted as well. Basil, oregano or parsley can be used as a herb seasoning. Typical additions are olives and feta cheese.
